Description

Integrating plant-forward meals into school menus supports student health and environmental sustainability while providing cost benefits to school food operations. You will learn to distinguish between vegetarian and vegan offerings and identify reimbursable plant-based proteins according to federal child nutrition program guidelines. We’ll demonstrate how to adapt animal-protein recipes into USDA-creditable, plant-forward versions and how to use menu cycles to introduce these meals effectively. Finally, we’ll discuss marketing techniques to increase student participation and excitement. By the end of this course, you will have the confidence to serve plant-forward meals that meet nutritional goals and appeal to students.
